tofu noodles have been very new in the market but with so many people getting more health conscious, these noodles have grown in popularity. This chewy noodle is known by many names such as soybean curd noodles, tofu shreds, bean curd noodles, soy noodles and soy vermicelli.

tofu noodles are made from ground and compressed tofu and are packed with protein and nutrients. These noodles can be found in the refrigerated or frozen foods section of many stores but dried tofu noodles are also available but need to be soaked in water mixed with baking soda until they soften, then rinsed before use. tofu noodles are usually served in salads, soups, or stir-fries.

Tofu Cheesecake- a Healthy Alternative

Friday, August 3rd, 2007 by The Cooking Guy

tofu cheesecake may sound like a contradiction in terms since it is fairly obvious that this cake has no cheese in it. Yet here is another wonderful use for tofu and if watching your waistline makes the real thing just a distant memory, you might want to give tofu cheesecake a try.

tofu carries heart healthy benefits and is high in protein plus there’s a big difference in the calories you will consume if you go with the healthier tofu cheesecake version. A slice of regular cheesecake, and we’re talking about a mere sliver, is a whopping 400 calories and almost 25 grams of fat while a similar slice of tofu cheesecake is about 200 calories and only 4 grams of fat.

tofu Cheesecake
If you want to give tofu cheesecake a try you might start with this simple recipe for chocolate tofu cheesecake. It’s very easy since it’s mixed in a blender and involves no baking. Plus it’s chocolate, so how can you go wrong?

Put 16 ounces of silken tofu, 1 1/2 cups of sugar, and 2 teaspoons of vanilla extract in a blender and puree. Melt 10 small squares of baking chocolate in a microwave safe bowl using a low setting and stirring frequently. Add this to the other ingredients in the blender and blend until thoroughly mixed. Spoon the mixture into a 9″ ready made graham cracker pie crust. Chill your new tofu cheesecake creation until it sets and top with cherry pie filling or a light raspberry sauce and serve with whipped cream.

Making Healthy Choices
Cheesecake is one of those things that a true connoisseur can’t seem to do without, but often diet restrictions can mean it’s off the list of acceptable foods or it might be a case of knowing what’s healthy and wanting to make better choices but whatever the reason, it doesn’t mean giving up that favorite treat completely and tofu cheesecake can be a satisfying alternative. It can be as varied as its real cheese counterpart and as easy as popping a few ingredients in the blender.

You can even make a tofu cheesecake very much like the infamous high calorie New York cheesecake but without all those killer calories and fat. So if you can’t resist that beautiful confection in the bakeshop window or if you dream of cheesecake at night, you don’t have to deprive yourself any longer. Give tofu cheesecake a try and you might be pleasantly surprised.
